🥟🍲 Mediterranean Easy Wonton Soup

✅ Ingredients (Serves 3–4)
For the Wontons

20–25 wonton wrappers

200g ground chicken or turkey
-
1 tbsp olive oil
-
2 garlic cloves, minced
-
1 tbsp finely chopped parsley
-
1 tbsp finely chopped green onion
-
½ tsp dried oregano
-
¼ tsp black pepper
-
¼ tsp salt
-
Optional: pinch of chili flakes
For the Mediterranean Broth
-
6 cups chicken broth (low sodium)
-
1 tbsp olive oil
-
2 garlic cloves, minced
-
1 small onion, sliced
-
1 small carrot, thinly sliced
-
½ cup baby spinach
-
½ cup chopped tomatoes OR 8–10 cherry tomatoes
-
1 bay leaf
-
½ tsp oregano
-
½ tsp thyme
-
Salt & pepper to taste
-
Juice of ½ lemon
-
Fresh parsley for garnish
👩🍳 Instructions
1. Make the Wontons

In a bowl, mix:

ground chicken
-
olive oil
-
garlic
-
parsley
-
green onion
-
oregano
-
salt + pepper
-
-
Place 1 tsp filling into each wonton wrapper.

Wet the edges with water, fold into a triangle, and press tightly.

Fold the two bottom corners together to seal (optional).
2. Prepare the Mediterranean Broth
-
In a pot, heat 1 tbsp olive oil.
-
Add garlic + onion; sauté 1 minute.
-
Add carrot, tomatoes, oregano, thyme, bay leaf.
-
Pour in chicken broth and bring to a gentle boil.

Simmer 5 minutes.
3. Cook the Wontons
-
Add wontons to the simmering broth.
-
Cook 5–7 minutes until they float and the meat is cooked.

Add spinach during the last minute.
4. Finish & Serve
Stir in:

lemon juice
-
salt & pepper to taste
Garnish with:

fresh parsley

a drizzle of olive oil
-
extra lemon if desired
