🥣 Easy Mediterranean-Style Wonton Soup

This easy wonton soup takes classic comfort and gives it a light Mediterranean-inspired twist using olive oil, fresh herbs, garlic, and a clean, aromatic broth.
🫒 Ingredients
For the Soup Broth

6 cups low-sodium chicken or vegetable broth

1 tablespoon extra-virgin olive oil

3 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 small onion or 2 shallots, finely sliced

1 tablespoon soy sauce or tamari (optional, light touch)

Salt and black pepper, to taste
For the Wontons

20–24 wonton wrappers

200 g ground chicken, turkey, or shrimp

1 tablespoon olive oil

1 green onion, finely chopped
-
1 tablespoon fresh parsley or cilantro, chopped

½ teaspoon grated ginger
-
½ teaspoon garlic powder
-
Salt & pepper, to taste
Optional Add-Ins

Baby spinach or bok choy

Mushrooms, thinly sliced

🍲 Instructions

Make the Wonton Filling
In a bowl, mix ground protein, olive oil, green onion, herbs, ginger, garlic powder, salt, and pepper. -
Assemble Wontons
Place 1 teaspoon filling in the center of each wrapper. Moisten edges with water, fold, and seal tightly. -
Prepare the Broth
Heat olive oil in a pot over medium heat. Sauté onion, garlic, and ginger until fragrant.
Pour in broth and soy sauce (if using). Bring to a gentle boil. -
Cook the Wontons
Add wontons to simmering broth. Cook 4–5 minutes until they float and are cooked through. -
Add Greens
Stir in spinach, mushrooms, or carrots. Simmer 1–2 minutes until tender. -
Finish & Serve
Adjust seasoning with salt and pepper. Serve hot.
