🫐 Mediterranean Fluffy Blueberry Pancakes

🧄 Ingredients

  • 1½ cups all-purpose flour

  • 2 tbsp honey or maple syrup

  • 2 tsp baking powder

  • ¼ tsp baking soda

  • ¼ tsp salt

  • ¾ cup milk (dairy or almond)

  • 1 large egg

  • 2 tbsp extra-virgin olive oil or melted butter

  • 1 tsp vanilla extract

  • Zest of ½ lemon (Mediterranean touch)

  • 1 cup fresh or frozen blueberries

  • Extra olive oil or butter for cooking


🔪 Instructions

  1. Mix dry ingredients
    In a large bowl, whisk flour, baking powder, baking soda, and salt.

  2. Mix wet ingredients
    In another bowl, whisk milk, egg, honey, olive oil, vanilla, and lemon zest.

  3. Combine gently
    Pour wet ingredients into dry. Stir just until combined (do not overmix).
    Fold in blueberries.

  4. Rest the batter
    Let batter sit 5 minutes for extra fluffiness.

  5. Cook pancakes
    Heat a non-stick pan over medium heat. Lightly grease.
    Pour ¼ cup batter per pancake.
    Cook 2–3 minutes until bubbles form, flip and cook 1–2 minutes more.

  6. Serve warm
