Mix dry ingredients
In a large bowl, whisk flour, baking powder, baking soda, and salt. -
Mix wet ingredients
In another bowl, whisk milk, egg, honey, olive oil, vanilla, and lemon zest. -
Combine gently
Pour wet ingredients into dry. Stir just until combined (do not overmix).
Fold in blueberries. -
Rest the batter
Let batter sit 5 minutes for extra fluffiness. -
Cook pancakes
Heat a non-stick pan over medium heat. Lightly grease.
Pour ¼ cup batter per pancake.
Cook 2–3 minutes until bubbles form, flip and cook 1–2 minutes more. -
