¼ cup fresh dill, chopped

2 tbsp fresh parsley or mint, chopped
Quick Pickling Dressing

¼ cup white wine vinegar or apple cider vinegar

3 tbsp extra-virgin olive oil

1 tbsp lemon juice

1–2 tsp honey (to taste)

1 clove garlic, finely grated

½ tsp sea salt

Freshly cracked black pepper

🔥 Instructions

Prep the Vegetables
Place sliced cucumbers and red onion in a large bowl.
Sprinkle lightly with salt and rest 10 minutes to release excess moisture.
Gently drain (do not rinse). -
Make the Pickling Dressing
Whisk vinegar, olive oil, lemon juice, honey, garlic, salt, and pepper until emulsified. -
Toss & Marinate
Pour dressing over cucumbers.
Add dill and parsley (or mint).
Toss well to coat. -
Chill
Refrigerate 20–30 minutes for best flavor (up to 24 hours). -
Finish & Serve
Taste and adjust acidity or sweetness.
Add feta, olives, or sumac if desired.
