1 cup cottage cheese

2 large eggs

½ cup almond flour

½ teaspoon baking powder

½ teaspoon garlic powder

½ teaspoon dried oregano or thyme

Pinch of salt & black pepper

¼ cup shredded mozzarella (optional, extra cheesy)

Preheat Oven
Preheat to 180°C (350°F). Line a baking tray with parchment paper. -
Blend Cottage Cheese
Blend cottage cheese until smooth for a fluffy texture
(you can skip blending if you like a rustic look). -
Mix Wet Ingredients
In a bowl, whisk eggs and blended cottage cheese until combined. -
Add Dry Ingredients
Stir in almond flour, baking powder, garlic powder, herbs, salt, and pepper.
Fold in mozzarella if using. -
Shape Biscuits
Scoop spoonfuls onto the tray, gently shaping into rounds. -
Bake
Bake 18–22 minutes until golden and set. -
Cool Slightly & Serve
Rest 5 minutes before enjoying.
