🌿🧄 Garlic & Herb Cottage Cheese Biscuits

✅ Ingredients

  • 1 cup cottage cheese

  • 2 large eggs

  • ½ cup almond flour

  • ½ teaspoon baking powder

  • ½ teaspoon garlic powder

  • ½ teaspoon dried oregano or thyme

  • Pinch of salt & black pepper

  • ¼ cup shredded mozzarella (optional, extra cheesy)


👩‍🍳 Instructions

  1. Preheat Oven
    Preheat to 180°C (350°F). Line a baking tray with parchment paper.

  2. Blend Cottage Cheese
    Blend cottage cheese until smooth for a fluffy texture
    (you can skip blending if you like a rustic look).

  3. Mix Wet Ingredients
    In a bowl, whisk eggs and blended cottage cheese until combined.

  4. Add Dry Ingredients
    Stir in almond flour, baking powder, garlic powder, herbs, salt, and pepper.
    Fold in mozzarella if using.

  5. Shape Biscuits
    Scoop spoonfuls onto the tray, gently shaping into rounds.

  6. Bake
    Bake 18–22 minutes until golden and set.

  7. Cool Slightly & Serve
    Rest 5 minutes before enjoying.


🌿 Mediterranean Variations

  • Add chopped parsley, dill, or chives

  • Sprinkle sesame or nigella seeds on top

  • Add olive bits or sun-dried tomatoes for flavor
