🥖 Garlic Herb Sourdough Bread Stuffed with Brie & Cranberry Sauce

🌿 Ingredients

For the Bread:

  • 1 round sourdough loaf (about 1 lb / 450 g), preferably crusty artisan-style

  • 8 oz (225 g) Brie cheese, sliced (Camembert also works)

  • ½ cup (120 ml) cranberry sauce (whole-berry or homemade preferred)

For the Garlic-Herb Butter:

  • 4 tbsp (60 g) unsalted butter, softened

  • 2 tbsp extra-virgin olive oil

  • 3 garlic cloves, minced

  • 1 tbsp fresh parsley, finely chopped

  • 1 tbsp fresh thyme leaves (or 1 tsp dried thyme)

  • 1 tsp fresh rosemary, finely chopped (optional)

  • Salt and freshly ground black pepper, to taste

  • Optional: pinch of chili flakes for a Mediterranean kick

Garnish (optional but gorgeous):

  • Extra herbs, a drizzle of olive oil, and a sprinkle of crushed pistachios or walnuts


🔥 Instructions

1. Prepare the Bread

  1. Preheat oven to 375°F (190°C).

  2. Place sourdough loaf on a large piece of foil or parchment paper on a baking tray.

  3. Using a sharp serrated knife, cut the bread in a crisscross pattern (1-inch squares), making sure not to slice all the way through the bottom — you want the loaf to stay intact.


2. Make the Garlic-Herb Butter

  1. In a small saucepan or bowl, combine butter, olive oil, garlic, parsley, thyme, rosemary, salt, and pepper.

  2. Warm gently until melted and aromatic (about 1–2 minutes).


3. Stuff the Bread

  1. Use your fingers or a knife to gently open up the bread cracks.

  2. Brush or drizzle garlic-herb butter into all the gaps — get it deep inside!

  3. Tuck slices of Brie evenly throughout the cuts.

  4. Spoon cranberry sauce into the gaps as well, alternating with the cheese.


4. Bake

  1. Loosely wrap the bread in foil and bake for 15 minutes (to melt the cheese).

  2. Uncover and bake another 8–10 minutes until the top is golden and crispy.

  3. Remove from oven and let rest 3–5 minutes before serving.


🍽️ To Serve

  • Drizzle lightly with olive oil and scatter with extra herbs.

  • Serve warm — pull-apart style — with small plates and napkins.

  • Perfect with a Mediterranean salad, charcuterie board, or a glass of dry rosé or white wine.


💡 Mediterranean Twists & Variations

  • Replace cranberry sauce with fig jam, pomegranate chutney, or roasted red pepper spread.

  • Add a few Kalamata olives or sun-dried tomato strips for savory contrast.

  • Sprinkle with toasted nuts (pine nuts, walnuts, or pistachios) for texture.

  • For a more herbal Mediterranean vibe, mix in lemon zest or za’atar to the butter.
