🍞 Gourmet Toasts – 2 Ways


1. Avocado, Cherry Tomato & Feta Toast

Ingredients (1 serving)

  • 1 slice of hearty whole grain or sourdough bread

  • ½ ripe avocado, sliced or mashed

  • 3–4 cherry tomatoes, halved

  • 2–3 tbsp crumbled feta cheese

  • ½ tsp olive oil (optional)

  • Salt & pepper, to taste

  • Fresh parsley, chopped (for garnish)

  • Optional: lemon juice or chili flakes

Instructions

  1. Toast the bread until golden brown.

  2. Spread or layer the avocado onto the toast.

  3. Top with cherry tomato halves.

  4. Sprinkle crumbled feta cheese over the top.

  5. Drizzle with olive oil (optional) and season with salt, pepper, and lemon juice or chili flakes.

  6. Garnish with chopped parsley.


2. Mushroom, Scrambled Egg & Yogurt Toast

Ingredients (1 serving)

  • 1 slice of bread (same as above)

  • 1 egg + splash of milk (for scrambling)

  • ½ cup mushrooms, sliced (cremini or button work well)

  • 1–2 tbsp plain Greek yogurt

  • 1 tsp olive oil or butter (for sautéing)

  • Salt & pepper, to taste

  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sauté mushrooms in olive oil or butter over medium heat until golden brown (about 5–7 minutes). Season with salt and pepper.

  2. Scramble the egg in a separate pan with a splash of milk for creaminess. Cook until soft and fluffy.

  3. Toast your bread slice.

  4. Spread Greek yogurt on the toast.

  5. Layer with sautéed mushrooms on one half and scrambled eggs on the other.

  6. Season with additional salt, pepper, and garnish with parsley.


Tips:

  • Use good quality bread – a dense sourdough or artisan loaf holds toppings best.

  • Make it vegan by replacing eggs and feta with tofu scramble and plant-based cheese/yogurt.

  • Add a dash of hot sauce or chili flakes for extra kick!
