🛒 Ingredients

  • 1½ kg (3–3½ lb) chicken (thighs, drumsticks, or quarters)

  • ⅓ cup extra-virgin olive oil

  • ⅓ cup fresh lemon juice (about 2 lemons)

  • Zest of 1 lemon

  • 6 cloves garlic, minced

  • 1½ tsp dried oregano

  • 1 tsp sea salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • ½ tsp dried thyme (optional)

  • ½ cup chicken broth (or water)

  • Fresh parsley or oregano, chopped (for garnish)

🔥 Oven Method (Traditional)

  1. Preheat oven to 200°C / 400°F.

  2. Arrange chicken in a baking dish, skin-side up.

  3. In a bowl, whisk olive oil, lemon juice, zest, garlic, oregano, salt, pepper, paprika, and thyme.

  4. Pour marinade over chicken, turning to coat well.

  5. Add chicken broth around the chicken (not over the skin).

  6. Bake uncovered 40–45 minutes, turning once, until golden and cooked through.

  7. Optional: Broil 3–5 minutes for extra crispy skin.
