🥗 Greek Tortellini Pasta Salad

For the Salad:

1 (9 oz / 250 g) package cheese tortellini

1 cup cherry tomatoes, halved

1 small cucumber, diced

½ cup red onion, finely sliced

½ cup Kalamata olives, pitted and halved

½ cup feta cheese, crumbled

¼ cup roasted red peppers, chopped (optional)

2 tablespoons fresh parsley, chopped 
For the Dressing:

¼ cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon lemon juice

1 teaspoon Dijon mustard

- 
Cook the Tortellini: 
 Bring a pot of salted water to a boil. Cook tortellini according to package directions until al dente. Drain and rinse under cold water to stop cooking.

Make the Dressing: 
 In a small bowl or jar, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, garlic, oregano, salt, and pepper.

Assemble the Salad: 
 In a large bowl, combine cooked tortellini, tomatoes, cucumber, red onion, olives, roasted peppers, and parsley.

Add Feta & Dressing: 
 Pour dressing over the salad and toss gently. Add crumbled feta on top.
