🍗 Grilled Chicken & Broccoli Bowls
with Creamy Mediterranean Garlic Sauce
Ingredients
Chicken Marinade

500 g chicken breast, sliced

2 tablespoons extra-virgin olive oil

Juice of ½ lemon

3 cloves garlic, minced

1 teaspoon dried oregano
-
½ teaspoon paprika
-
Salt & black pepper, to taste
Broccoli
-
3 cups broccoli florets
-
1 tablespoon olive oil
-
Salt & pepper
Creamy Garlic Sauce
-
¾ cup Greek yogurt
-
1 tablespoon tahini
-
1 tablespoon lemon juice
-
1 clove garlic, finely grated
-
1 tablespoon olive oil
-
Salt to taste
Bowl Base (Optional)

Cooked quinoa, brown rice, or cauliflower rice
Garnish
-
Fresh parsley or dill
-
Chili flakes (optional)
Instructions

Marinate Chicken
Combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
Toss chicken and marinate 20–30 minutes. -
Cook Broccoli
Toss broccoli with olive oil, salt, and pepper.
Grill, roast at 200°C (400°F) for 15 minutes, or sauté until tender-crisp. -
Grill Chicken
Grill chicken on a hot grill pan or outdoor grill 4–5 minutes per side until golden and cooked through. -
Make Garlic Sauce
Whisk yogurt, tahini, lemon juice, garlic, olive oil, and salt until smooth. Adjust thickness with water if needed. -
Assemble Bowls
Add base (if using), broccoli, sliced chicken, and drizzle generously with garlic sauce. -
Finish & Serve
Garnish with herbs and chili flakes.
