🍗 Grilled Chicken & Broccoli Bowls

with Creamy Mediterranean Garlic Sauce

Ingredients

Chicken Marinade

  • 500 g chicken breast, sliced

  • 2 tablespoons extra-virgin olive oil

  • Juice of ½ lemon

  • 3 cloves garlic, minced

  • 1 teaspoon dried oregano

  • ½ teaspoon paprika

  • Salt & black pepper, to taste

Broccoli

  • 3 cups broccoli florets

  • 1 tablespoon olive oil

  • Salt & pepper

Creamy Garlic Sauce

  • ¾ cup Greek yogurt

  • 1 tablespoon tahini

  • 1 tablespoon lemon juice

  • 1 clove garlic, finely grated

  • 1 tablespoon olive oil

  • Salt to taste

Bowl Base (Optional)

  • Cooked quinoa, brown rice, or cauliflower rice

Garnish

  • Fresh parsley or dill

  • Chili flakes (optional)


Instructions

  1. Marinate Chicken
    Combine olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.
    Toss chicken and marinate 20–30 minutes.

  2. Cook Broccoli
    Toss broccoli with olive oil, salt, and pepper.
    Grill, roast at 200°C (400°F) for 15 minutes, or sauté until tender-crisp.

  3. Grill Chicken
    Grill chicken on a hot grill pan or outdoor grill 4–5 minutes per side until golden and cooked through.

  4. Make Garlic Sauce
    Whisk yogurt, tahini, lemon juice, garlic, olive oil, and salt until smooth. Adjust thickness with water if needed.

  5. Assemble Bowls
    Add base (if using), broccoli, sliced chicken, and drizzle generously with garlic sauce.

  6. Finish & Serve
    Garnish with herbs and chili flakes.
