🥩 Mediterranean Ground Beef & Chopped Cabbage Skillet

500 g ground beef (lean)

4 cups green cabbage, finely chopped

1 medium onion, thinly sliced

3 cloves garlic, minced

2 tbsp extra-virgin olive oil

1 tsp ground cumin

1 tsp paprika (smoked if possible)

½ tsp ground coriander

½ tsp black pepper

Salt, to taste

2 tbsp tomato paste

¼ cup crushed tomatoes or tomato sauce

2 tbsp fresh parsley or dill, chopped

1 tbsp lemon juice (optional, for brightness)
Instructions

Brown beef: Heat olive oil in a large skillet over medium heat. Add ground beef and cook until browned, breaking it apart. Season lightly with salt and pepper.

Add aromatics: Stir in onion and cook 3–4 minutes until softened. Add garlic and cook 30 seconds.

Spice it: Add cumin, paprika, coriander, and black pepper; stir until fragrant.

Tomato base: Mix in tomato paste and crushed tomatoes. Cook 2–3 minutes.

Add cabbage: Fold in chopped cabbage. Cover and cook 8–10 minutes, stirring occasionally, until cabbage is tender but not mushy.

Finish: Stir in herbs and lemon juice. Adjust seasoning and remove from heat.
