Ham and Cheese Puff Pastry Pockets

🌿 Mediterranean Ham & Cheese Puff Pastry Pockets

Ingredients (makes 8 pockets)

  • 1 sheet puff pastry, thawed

  • 150–200g sliced ham (turkey ham also works)

  • 1 cup shredded cheese (mozzarella, cheddar, or a mix)

  • 1–2 tbsp Dijon mustard (optional but very Mediterranean)

  • 1 egg (for egg wash)

  • 1 tbsp sesame seeds or nigella seeds (optional)

  • Fresh thyme or oregano (optional)


👩‍🍳 Instructions

1. Prepare the pastry

  • Lay the thawed puff pastry sheet on a floured surface.

  • Cut it into 8 equal rectangles.


2. Fill the pockets

On each rectangle:

  • Spread a small amount of Dijon mustard (optional).

  • Add a slice of ham (fold if needed).

  • Sprinkle shredded cheese generously.

  • Add a pinch of oregano or thyme.


3. Seal them

  • Fold each rectangle into a pocket (either square or triangle).

  • Press the edges with a fork to seal well so cheese doesn’t leak.


4. Brush & finish

  • Beat the egg and brush the tops of each pocket.

  • Sprinkle sesame seeds or nigella seeds.

  • Add a tiny pinch of herbs on top if you like.


5. Bake

Bake at 200°C (390°F) for 18–22 minutes, until:

  • Golden

  • Puffy

  • Cheese is melted

  • Edges are crispy


🍽️ Serve With

  • Tzatziki

  • Garlic yogurt dip

  • Tomato–cucumber salad

  • Olives

  • A hot cup of tea


💡 Tips

  • Use turkey or chicken ham for a lighter Mediterranean option.

  • Add a slice of tomato or roasted pepper inside for extra flavor.

  • These freeze perfectly — bake straight from the freezer!
