Cook the pasta
Bring a pot of salted water to a boil. Cook pasta according to package directions until al dente. Reserve ¼ cup pasta water, then drain. -
Sauté the vegetables
Heat olive oil in a large skillet over medium heat. Add garlic and sauté for 30 seconds until fragrant. -
Add zucchini & tomatoes
Add zucchini and cook for 3–4 minutes until just tender. Stir in tomatoes, oregano, basil, red pepper flakes, salt, and pepper. Cook another 4–5 minutes until tomatoes soften and release their juices. -
Combine
Add cooked pasta to the skillet. Toss gently, adding a little reserved pasta water if needed to loosen the sauce. -
Finish & serve
Remove from heat. Top with Parmesan or feta if using, garnish with fresh herbs, and serve warm.
