Homemade Taco Bell’s Mexican Pizza

🌮🍕 Homemade Mediterranean Mexican Pizza

📝 Ingredients (Makes 2 pizzas)

For the Tortilla “Pizza Bases”

  • 4 whole-wheat tortillas (or low-carb tortillas)

  • Olive oil spray or 1–2 tbsp olive oil

For the Mediterranean Taco Meat

  • 250g (½ lb) ground chicken or turkey

  • 1 tbsp olive oil

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • ½ tsp paprika

  • ½ tsp cumin

  • ½ tsp dried oregano

  • ½ tsp chili flakes

  • Salt & pepper

For the Mediterranean Sauce

  • ½ cup tomato sauce

  • 2 tbsp tomato paste

  • ½ tsp oregano

  • ½ tsp garlic powder

  • ½ tsp paprika

  • 1 tsp honey

  • 1 tbsp lemon juice

Toppings

  • ¾–1 cup shredded cheese (mozzarella or a mozzarella–cheddar blend)

  • ½ cup chopped tomatoes

  • ¼ cup olives (optional, very Mediterranean!)

  • ¼ cup green onions or parsley

  • Jalapeños (optional)


👩‍🍳 Instructions


1. Crisp the Tortillas

  1. Preheat oven to 200°C (400°F).

  2. Brush or spray tortillas with olive oil.

  3. Bake 4–5 minutes per side until lightly crisp.
    (This gives you the signature Mexican pizza crunch.)


2. Make the Mediterranean Taco Meat

  1. Heat olive oil in a pan.

  2. Add onion + garlic; sauté until fragrant.

  3. Add ground chicken/turkey. Cook until browned.

  4. Add paprika, cumin, oregano, chili flakes, salt, pepper.

  5. Cook 2–3 more minutes.

  6. Set aside.


3. Make the Mediterranean Pizza Sauce

In a bowl mix:

  • tomato sauce

  • tomato paste

  • oregano

  • garlic powder

  • paprika

  • honey

  • lemon juice

Adjust salt as needed.


4. Assemble Each Mexican Pizza

Layer in this order:

  1. Bottom tortilla

  2. Spread a thin layer of Mediterranean sauce

  3. Add a layer of Mediterranean taco chicken

  4. Place second tortilla on top

  5. Spread sauce again on top

  6. Sprinkle shredded cheese

  7. Add tomatoes, olives, jalapeños (optional)


5. Bake

  • Bake for 8–10 minutes until cheese is melted and bubbly.


6. Garnish & Serve

Top with:

  • Green onions or parsley

  • A squeeze of lemon

  • Greek yogurt (as a healthy sour cream alternative)

Cut into 4 slices and serve warm!
