🥗 Honey-Lime Chicken & Avocado Rice Stack (Mediterranean Style)
A layered bowl/stack of fragrant rice, juicy honey-lime chicken, creamy avocado, fresh vegetables, and Mediterranean herbs.
🛒 Ingredients (Serves 2–3)
For the Honey-Lime Chicken

2 boneless chicken breasts (or thighs)

2 tbsp extra-virgin olive oil
-
2 tbsp honey
-
Zest of 1 lime
-
Juice of 2 limes
-
3 garlic cloves, minced
-
1 tsp cumin
-
1 tsp paprika (or smoked paprika)
-
½ tsp oregano
-
Salt & pepper to taste
For the Rice Layer
-
1 cup basmati or jasmine rice
-
2 cups low-sodium chicken broth (or water)
-
1 tbsp olive oil
-
1 tbsp fresh parsley, chopped
-
1 tbsp fresh dill or mint, chopped
-
Salt to taste
For the Avocado Layer
-
1 large ripe avocado
-
Juice of ½ lime
-
Pinch of salt
-
1 tbsp finely chopped red onion (optional)
Fresh Mediterranean Salad Layer

1 cup cherry tomatoes, halved
-
½ cucumber, diced
-
2 tbsp red onion, finely diced
-
2 tbsp kalamata olives, sliced
-
2 tbsp feta cheese, crumbled
-
1 tbsp olive oil
-
1 tsp red wine vinegar or lemon juice
-
Pinch of oregano
-
Salt & pepper
Optional Toppings

Yogurt-tahini drizzle

Extra lime wedges

Fresh cilantro, parsley, or mint
🍳 Instructions
1. Marinate the Chicken (20–30 min)

In a bowl, whisk together:

olive oil
-
honey
-
lime zest & juice
-
garlic
-
cumin, paprika, oregano
-
salt & pepper
-

Add chicken, coat evenly, and marinate for at least 20 minutes (or up to 4 hours).
2. Cook the Rice

Rinse rice until water runs clear.

Heat olive oil in a pot, then add rice and toast 1 minute.

Add broth and salt.
-
Bring to a boil, reduce to low, cover, and cook 12–15 minutes.

Remove from heat, fluff, then mix parsley and dill/mint.
3. Prepare the Avocado Mash
Mash avocado with lime juice, salt, and optional red onion.
Keep slightly chunky for texture.
4. Make the Mediterranean Salad
Toss tomatoes, cucumber, onion, olives, and feta with olive oil, vinegar/lemon, oregano, salt, and pepper.
5. Cook the Chicken

Heat a skillet on medium-high.

Add marinated chicken and cook 5–6 minutes per side until browned and cooked through.

Let rest 5 minutes, then slice.
Tip: Allow marinade to reduce in the pan to a glossy glaze.

You can layer in a bowl or use a round mold for a “stack.”

🌿 Mediterranean-Style Yogurt–Tahini Drizzle (Optional)
Mix:

2 tbsp Greek yogurt

1 tsp tahini
-
1 tsp lemon juice
-
A little water to thin
-
Pinch of salt and cumin
Spoon over the chicken.
