Mediterranean Rice

1 cup basmati or jasmine rice

2 cups chicken or vegetable broth

1 tbsp olive oil

½ tsp salt
-
¼ tsp turmeric (optional, for color)
Avocado Layer

2 ripe avocados, diced
-
1 tbsp fresh lime juice
-
2 tbsp olive oil
-
Salt & pepper to taste
Fresh Toppings

½ cup cherry tomatoes, diced

¼ cup cucumber, finely chopped

2 tbsp red onion, finely diced

2 tbsp fresh parsley or cilantro, chopped

🔪 Instructions
1. Cook the Rice

Rinse rice until water runs clear.

Bring broth, olive oil, salt, and turmeric to a boil.

Add rice, cover, and simmer 12–15 minutes until tender.

Fluff and keep warm.
2. Cook the Honey Lime Chicken

Whisk olive oil, lime zest, lime juice, honey, garlic, spices, salt, and pepper.

Heat a skillet over medium-high.

Cook chicken 5–7 minutes, turning until caramelized and cooked through.

Let glaze thicken slightly.
3. Prepare Avocado

Gently toss avocado with lime juice, olive oil, salt, and pepper.
4. Assemble the Stack

Spoon rice into a bowl or ring mold and press gently.

Layer avocado on top.
