Rice Layer

1½ cups cooked brown rice or basmati rice

1 tbsp olive oil
-
2 tbsp fresh parsley or cilantro, chopped

1 tbsp lime juice

Salt, to taste
Avocado Layer

2 ripe avocados, diced
-
Juice of ½ lime
-
Pinch of salt
Optional Toppings

Cherry tomatoes, diced

Crumbled feta cheese

Toasted pumpkin seeds or pine nuts
Instructions

Marinate chicken: In a bowl, mix olive oil, lime zest, lime juice, honey, garlic, paprika, cumin, salt, and pepper. Add chicken and marinate 15–30 minutes.

Cook chicken: Heat a skillet over medium heat. Cook chicken 6–8 minutes, turning, until caramelized and cooked through.

Season rice: In a bowl, toss warm rice with olive oil, herbs, lime juice, and salt.

Prepare avocado: Gently mix diced avocado with lime juice and salt.

Assemble stack: Using a ring mold or bowl, layer rice → chicken → avocado. Press lightly and unmold.

Garnish: Add tomatoes, feta, and seeds if desired.
