🛒 Ingredients (Serves 3–4)

Shrimp

  • 450 g (1 lb) large shrimp, peeled & deveined

  • 2 tbsp extra-virgin olive oil

  • 1½ tbsp honey

  • Zest of 1 lime

  • 2 tbsp fresh lime juice

  • 2 cloves garlic, minced

  • ½ tsp smoked paprika

  • ¼ tsp chili flakes (optional)

  • Salt & black pepper, to taste

Rice Layer

  • 1½ cups cooked jasmine or basmati rice (warm)

  • 1 tbsp olive oil

  • 1 tbsp fresh lime juice

  • 2 tbsp chopped parsley or cilantro

  • Pinch of salt

Avocado Layer

  • 2 ripe avocados, diced

  • 1 tbsp lime juice

  • Salt & pepper, to taste

Garnish (Optional)

  • Cherry tomatoes, diced

  • Feta cheese crumbles

  • Sesame seeds or fresh herbs


👩‍🍳 Instructions

1️⃣ Marinate the Shrimp

In a bowl, mix olive oil, honey, lime zest, lime juice, garlic, paprika, chili flakes, salt, and pepper.
Add shrimp and marinate for 10–15 minutes.

2️⃣ Cook the Shrimp

Heat a skillet over medium-high heat.
Add shrimp and cook 2 minutes per side, until caramelized and glazed. Remove from heat.

3️⃣ Season the Rice

In a bowl, mix warm rice with olive oil, lime juice, chopped herbs, and salt.

4️⃣ Prepare Avocado

Toss diced avocado with lime juice, salt, and pepper.

5️⃣ Assemble the Stack

Using a ring mold or small bowl:

  • Press rice as the base

  • Add avocado layer

  • Top with honey-lime shrimp

Carefully remove the mold.

6️⃣ Finish

Garnish with tomatoes, feta, or herbs. Serve immediately.
