🥗 Honeycrisp Apple Broccoli Salad (Mediterranean Style)

3 cups broccoli florets, chopped small

1 large Honeycrisp apple, diced (leave skin on for color)

½ cup carrot, shredded

¼ cup red onion, finely chopped

⅓ cup dried cranberries or pomegranate seeds

¼ cup toasted almonds or walnuts (Mediterranean touch)

2 tbsp sunflower seeds (optional)
Mediterranean Yogurt Dressing

½ cup Greek yogurt
-
2 tbsp extra-virgin olive oil
-
1 tbsp apple cider vinegar or lemon juice

1½ tbsp honey
-
½ tsp Dijon mustard
-
¼ tsp sea salt

¼ tsp black pepper
🥣 Instructions
1. Prep the Ingredients

Chop broccoli into small bite-size pieces (raw).

Dice the Honeycrisp apple just before mixing so it stays crisp and doesn’t brown.

Shred the carrot and chop the red onion finely.
2. Make the Dressing
Whisk together:
Greek yogurt + olive oil + honey + Dijon mustard + apple cider vinegar + salt + pepper
→ until creamy and smooth.
3. Assemble the Salad
In a large bowl, combine:
Broccoli, apples, carrots, red onion, cranberries/pomegranate, nuts, and seeds.
Pour the dressing over the top and toss until everything is evenly coated.
4. Chill & Serve
