Cook the Pasta
Boil pasta in salted water until just al dente. Reserve ½ cup pasta water. Drain. -
Build the Sauce
Heat olive oil in a large skillet over medium heat.
Brown sausage (or ground meat), breaking it up. Remove excess fat if needed. -
Add Veggies & Garlic
Add onion and bell pepper. Cook 4–5 minutes until softened.
Stir in garlic and red pepper flakes. -
Deglaze with Wine
Pour in red wine. Simmer 2–3 minutes to cook off alcohol and concentrate flavor. -
Tomatoes & Herbs
Add crushed tomatoes, oregano, basil, salt, and pepper. Simmer 8–10 minutes. -
Combine with Pasta
Add pasta to sauce, tossing well. Add pasta water as needed for silkiness. -
Finish & Serve
Remove from heat. Sprinkle with fresh herbs and Parmesan.
