For the Cod

3 cloves garlic, minced

Zest & juice of 1 lemon
For the Brussels Sprouts

4 cups Brussels sprouts, halved

2 tbsp olive oil

½ tsp garlic powder

½ tsp black pepper

½ tsp sea salt
For the Bowl Base (Optional)

Cooked quinoa, brown rice, or cauliflower rice
For Garnish

Fresh parsley or dill

Lemon wedges

Crumbled feta (optional)
👩🍳 Instructions

Roast the Brussels Sprouts
Preheat oven to 220°C (425°F).
Toss Brussels sprouts with olive oil, garlic powder, salt, and pepper.
Roast for 22–25 minutes, flipping halfway, until crispy and golden. -
Season the Cod
Pat cod dry. Season with salt, pepper, paprika, and oregano. -
Cook the Cod
Heat olive oil and butter in a skillet over medium heat.
Add garlic and sauté 30 seconds.
Add cod and cook 3–4 minutes per side until flaky. -
Finish with Lemon
Add lemon zest and juice to the pan. Spoon sauce over cod. -
Assemble Bowls
Add grains or cauliflower rice to bowls.
Top with cod and roasted Brussels sprouts. -
Garnish & Serve
Finish with fresh herbs, feta (if using), and lemon wedges.
