🛒 Ingredients (Serves 4)

For the Cod

  • 4 cod fillets (150–180 g each)

  • Salt & black pepper, to taste

  • 1 tsp paprika

  • 1 tsp dried oregano

  • 2 tbsp olive oil

  • 2 tbsp butter

  • 3 cloves garlic, minced

  • Zest & juice of 1 lemon

For the Brussels Sprouts

  • 4 cups Brussels sprouts, halved

  • 2 tbsp olive oil

  • ½ tsp garlic powder

  • ½ tsp black pepper

  • ½ tsp sea salt

For the Bowl Base (Optional)

  • Cooked quinoa, brown rice, or cauliflower rice

For Garnish

  • Fresh parsley or dill

  • Lemon wedges

  • Crumbled feta (optional)


👩‍🍳 Instructions

  1. Roast the Brussels Sprouts
    Preheat oven to 220°C (425°F).
    Toss Brussels sprouts with olive oil, garlic powder, salt, and pepper.
    Roast for 22–25 minutes, flipping halfway, until crispy and golden.

  2. Season the Cod
    Pat cod dry. Season with salt, pepper, paprika, and oregano.

  3. Cook the Cod
    Heat olive oil and butter in a skillet over medium heat.
    Add garlic and sauté 30 seconds.
    Add cod and cook 3–4 minutes per side until flaky.

  4. Finish with Lemon
    Add lemon zest and juice to the pan. Spoon sauce over cod.

  5. Assemble Bowls
    Add grains or cauliflower rice to bowls.
    Top with cod and roasted Brussels sprouts.

  6. Garnish & Serve
    Finish with fresh herbs, feta (if using), and lemon wedges.
