🌿 Low Carb Crustless Pizza Bowl (Mediterranean Inspired)

Ingredients

Base Vegetables

  • 1 tbsp olive oil

  • 1 cup sliced mushrooms

  • 1 small red onion, thinly sliced

  • 1 small bell pepper (red or green), sliced

  • 1 cup cherry tomatoes, halved

  • 1 small zucchini, diced (optional)

Protein

Choose any:

  • 1 cup cooked chicken breast (shredded or cubed)
    OR 1 cup ground beef/turkey (cooked)
    OR 6–8 slices turkey pepperoni

Sauce & Seasoning

  • ½ cup sugar-free marinara

  • 2–3 cloves garlic, minced

  • 1 tsp dried oregano

  • 1 tsp dried basil

  • ½ tsp chili flakes

  • Salt & black pepper to taste

Cheese

  • 1 cup shredded mozzarella

  • ¼ cup grated parmesan

Toppings (Mediterranean Style)

  • 6–8 olives, sliced

  • Fresh basil or parsley

  • Optional: a drizzle of olive oil


🍳 Instructions

1. Sauté the vegetables

Heat olive oil in a pan.
Add mushrooms, onions, bell pepper, and zucchini.
Cook 5–7 minutes until softened.
Add garlic and cherry tomatoes; cook 1 minute.

2. Add protein

Add cooked chicken/ground beef/pepperoni.
Season with oregano, basil, chili flakes, salt & pepper.

3. Add marinara

Pour in the sugar-free marinara and stir well.
Cook 1–2 minutes until warm.

4. Assemble the pizza bowls

Transfer mixture into 2 oven-safe bowls.
Top with mozzarella and parmesan.
Add olives on top.

5. Melt and brown the cheese

Place bowls under the broiler (grill) for 3–5 minutes
until cheese is melted, bubbly, and lightly golden.


🌱 Optional Mediterranean Add-Ons

  • A few artichoke hearts

  • Sun-dried tomatoes

  • A pinch of za’atar

  • A drizzle of extra virgin olive oil before serving

  • Fresh arugula on top after baking
