For the Carrots

1 kg (2 lbs) carrots, peeled and sliced lengthwise

2 tbsp olive oil (extra virgin)

2 tbsp maple syrup

1 clove garlic, minced (optional)

1/2 tsp salt

1/4 tsp black pepper

1/2 tsp ground cumin (Mediterranean touch)

1/2 tsp smoked paprika (optional)
For Topping

1/3 cup crumbled feta
-
1/4 cup chopped pistachios

Fresh parsley, chopped

Optional: a drizzle of lemon or orange juice
🔥 Instructions
1. Prepare the carrots

Preheat oven to 220°C (425°F).

Place sliced carrots on a baking sheet.

Drizzle with olive oil and maple syrup.

Add garlic, salt, pepper, cumin, and paprika.

Toss well to coat evenly.
2. Roast

Spread carrots in a single layer.

Roast 20–25 minutes, flipping halfway.

Once out of the oven:
