🥕 Maple-Roasted Carrots with Feta & Pistachios

Ingredients

For the Carrots

  • 1 kg (2 lbs) carrots, peeled and sliced lengthwise

  • 2 tbsp olive oil (extra virgin)

  • 2 tbsp maple syrup

  • 1 clove garlic, minced (optional)

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 tsp ground cumin (Mediterranean touch)

  • 1/2 tsp smoked paprika (optional)

For Topping

  • 1/3 cup crumbled feta

  • 1/4 cup chopped pistachios

  • Fresh parsley, chopped

  • Optional: a drizzle of lemon or orange juice


🔥 Instructions

1. Prepare the carrots

  1. Preheat oven to 220°C (425°F).

  2. Place sliced carrots on a baking sheet.

  3. Drizzle with olive oil and maple syrup.

  4. Add garlic, salt, pepper, cumin, and paprika.

  5. Toss well to coat evenly.


2. Roast

  • Spread carrots in a single layer.

  • Roast 20–25 minutes, flipping halfway.

  • Carrots should be caramelized and slightly crisp at the edges.


3. Add toppings

Once out of the oven:

  • Sprinkle crumbled feta over warm carrots.

  • Add chopped pistachios.

  • Finish with parsley and a squeeze of lemon/orange juice.


Optional Mediterranean Variations

  • Add za’atar or oregano

  • Replace pistachios with walnuts or pine nuts

  • Use goat cheese instead of feta

  • Add roasted chickpeas for protein
