🫒 Mediterranean Baked Garlic Shrimp (15-Minute Dinner)

🛒 Ingredients

500 g (1 lb) shrimp, peeled & deveined

3 tbsp extra-virgin olive oil

4 cloves garlic, minced
-
Zest + juice of 1 lemon
-
1 tsp paprika
-
½ tsp dried oregano
-
¼ tsp chili flakes (optional)

Salt & black pepper, to taste

1 cup cherry tomatoes, halved

2 tbsp fresh parsley or basil, chopped
-
Optional: feta cheese or olives for serving
👩🍳 Instructions

Preheat oven to 220°C / 425°F.

Add shrimp to a baking dish. Drizzle with olive oil, add garlic, lemon zest & juice, paprika, oregano, chili flakes, salt, and pepper. Toss to coat.

Scatter cherry tomatoes over the top.

Bake 12–15 minutes, until shrimp are pink and tender.

Finish with fresh herbs (and feta or olives if using).
