🐟 Mediterranean Baked Salmon with Creamy Lemon Garlic Sauce

For the Salmon

4 salmon fillets

1 tablespoon olive oil

Salt & black pepper, to taste

1 teaspoon paprika or dried oregano
For the Creamy Lemon Garlic Sauce

1 tablespoon olive oil

3 cloves garlic, minced

½ cup Greek yogurt or light cream
-
¼ cup chicken or vegetable broth
-
Juice of 1 lemon
-
Zest of ½ lemon
-
1 tablespoon fresh parsley or dill, chopped

Salt & pepper, to taste
👩🍳 Instructions

Preheat Oven
Preheat to 190°C (375°F). Lightly oil a baking dish. -
Season Salmon
Place salmon in the dish.
Drizzle with olive oil, season with salt, pepper, and paprika. -
Make Sauce
Heat olive oil in a pan over low heat.
Add garlic and sauté 30 seconds (don’t brown).
Stir in broth, yogurt (or cream), lemon juice, zest, salt, and pepper.
Simmer gently 2–3 minutes until smooth. -
Bake
Pour sauce over salmon.
Bake 15–18 minutes until salmon flakes easily. -
Finish
Sprinkle with fresh herbs and extra lemon if desired.
