Lemon β’ Garlic β’ Herbs β’ Cherry Tomatoes β’ Olive Oil
β Ingredients (Serves 2β4)
For the Salmon

2 salmon fillets (about 170β200g each)

2 tbsp extra-virgin olive oil
-
2β3 garlic cloves, minced
-
Juice of 1 lemon
-
Zest of Β½ lemon
-
1 tsp dried oregano
-
Β½ tsp dried thyme or rosemary
-
Β½ tsp paprika (optional)
-
Salt & black pepper to taste
Mediterranean Topping
-
1 cup cherry tomatoes, halved
-
ΒΌ cup red onion, thinly sliced
-
ΒΌ cup kalamata olives, sliced
-
ΒΌββ cup feta cheese, crumbled
-
1β2 tbsp chopped fresh parsley
-
1 tbsp capers (optional)

1. Prepare the Salmon

Preheat oven to 200Β°C (400Β°F).

Place salmon fillets on a baking dish.
-
In a small bowl, mix:
-
olive oil
-
garlic
-
lemon juice + zest
-
oregano
-
thyme
-
paprika
-
salt + pepper
-
-
Pour this marinade over the salmon.
2. Add the Mediterranean Topping
Scatter over and around the salmon:
-
cherry tomatoes
-
olives
-
red onion
-
capers (optional)
Sprinkle feta generously on top.
3. Bake
-
Bake for 12β15 minutes, depending on thickness.

Salmon should flake easily with a fork but stay moist.
4. Garnish & Serve
Top with fresh parsley and an extra drizzle of olive oil or lemon.
