For the Salmon

  • 2 salmon fillets (about 170–200g each)

  • 2 tbsp extra-virgin olive oil

  • 2–3 garlic cloves, minced

  • Juice of 1 lemon

  • Zest of Β½ lemon

  • 1 tsp dried oregano

  • Β½ tsp dried thyme or rosemary

  • Β½ tsp paprika (optional)

  • Salt & black pepper to taste

Mediterranean Topping

  • 1 cup cherry tomatoes, halved

  • ΒΌ cup red onion, thinly sliced

  • ΒΌ cup kalamata olives, sliced

  • ¼–⅓ cup feta cheese, crumbled

  • 1–2 tbsp chopped fresh parsley

  • 1 tbsp capers (optional)

1. Prepare the Salmon

  1. Preheat oven to 200Β°C (400Β°F).

  2. Place salmon fillets on a baking dish.

  3. In a small bowl, mix:

    • olive oil

    • garlic

    • lemon juice + zest

    • oregano

    • thyme

    • paprika

    • salt + pepper

  4. Pour this marinade over the salmon.


2. Add the Mediterranean Topping

Scatter over and around the salmon:

  • cherry tomatoes

  • olives

  • red onion

  • capers (optional)

Sprinkle feta generously on top.


3. Bake

  • Bake for 12–15 minutes, depending on thickness.

  • Salmon should flake easily with a fork but stay moist.
