🐟🍅 Mediterranean Baked Salmon with Feta & Sun-Dried Tomatoes 

Moist, flavorful salmon baked with olive oil, garlic, oregano, feta, and tangy sun-dried tomatoes — the perfect Mediterranean dinner!


Ingredients (Serves 2–3)

For the Salmon

  • 2 salmon fillets (around 150–180g each)

  • 1½ tbsp olive oil

  • 1 tbsp lemon juice

  • 2 cloves garlic, minced

  • 1 tsp oregano

  • ½ tsp paprika

  • ½ tsp black pepper

  • ¼–½ tsp salt

  • 1 tsp lemon zest

Mediterranean Topping

  • ¼ cup sun-dried tomatoes, chopped

  • ¼ cup feta cheese, crumbled

  • 2 tbsp fresh parsley, chopped

  • 2 tbsp kalamata olives, chopped (optional)

  • 1–2 tbsp sun-dried tomato oil from the jar (optional but adds amazing flavor)


🔧 Instructions

1. Preheat Oven

  • Preheat to 200°C (400°F).

  • Line a baking dish with parchment or lightly oil it.


2. Season the Salmon

In a small bowl, mix:
✔ olive oil
✔ lemon juice
✔ lemon zest
✔ garlic
✔ oregano
✔ paprika
✔ salt & pepper

Brush or rub this mixture all over the salmon fillets.


3. Add Mediterranean Topping

In another bowl, combine:
✔ sun-dried tomatoes
✔ feta cheese
✔ parsley
✔ olives (optional)
✔ 1 tbsp sun-dried tomato oil

Spoon generously over each salmon fillet.


4. Bake

  • Bake for 12–15 minutes, depending on thickness.

  • Salmon should flake easily with a fork and stay moist inside.

(Optional: Broil for the last 1–2 minutes for a golden feta top.)
