Mediterranean Butter Cookies (4-Ingredient Recipe)

Crispy, tender, melt-in-your-mouth!

Ingredients

  • 1 cup (225g) unsalted butter, softened

  • ½ cup (100g) sugar (can use coconut sugar for a richer flavor)

  • 2 cups (240g) all-purpose flour

  • 1 teaspoon pure vanilla extract
    (Optional Mediterranean twists: zest of 1 lemon OR 2 tbsp orange blossom water)


Instructions

  1. Preheat oven to 350°F (180°C). Line a baking tray with parchment paper.

  2. In a bowl, cream the butter and sugar until pale and fluffy.

  3. Add vanilla (or lemon zest/orange blossom water) and mix.

  4. Slowly add flour, mixing until a soft dough forms.

  5. Scoop or roll into 1-inch balls, gently flatten with a fork.

  6. Bake 12–15 minutes until edges are lightly golden.

  7. Cool completely — they firm up as they cool!


Optional Mediterranean Toppings

  • Dust with powdered sugar

  • Sprinkle with pistachios

  • Dip edges in dark chocolate

  • Brush warm cookies with honey + crushed walnuts
