🧀 Mediterranean Cheesy Potato & Egg Bake

📝 Ingredients

Base

  • 3 medium potatoes, peeled & thinly sliced or grated

  • 1 small onion, finely chopped (optional)

  • 1 tbsp olive oil

  • Salt & pepper

Egg Mixture

  • 6 large eggs

  • ½ cup Greek yogurt or cream

  • ½ cup milk

  • 1 cup shredded mozzarella

  • ½ cup shredded cheddar (gives that golden top!)

  • ¼ cup Parmesan

  • ½ tsp garlic powder

  • ½ tsp oregano

  • ¼ tsp nutmeg (Mediterranean touch)

Garnish

  • Fresh chives or parsley, chopped

  • Drizzle of olive oil


🍳 Instructions

1. Prepare the Potatoes

  • Thinly slice or grate potatoes.

  • Heat 1 tbsp olive oil in a pan.

  • Add potatoes (and onions if using), cook 5–6 minutes until slightly soft.

  • Season with salt and pepper.
    This step ensures your bake is soft and creamy inside.


2. Make the Egg-Cheese Mixture

In a bowl, whisk:

  • Eggs

  • Greek yogurt/cream

  • Milk

  • Mozzarella

  • Cheddar

  • Parmesan

  • Garlic powder

  • Oregano

  • Nutmeg

  • Salt & pepper

Mix until smooth and creamy.


3. Combine & Pour

  • Preheat oven to 190°C (375°F).

  • Grease a round baking dish or metal ring mold (like the photo).

  • Place the cooked potatoes at the bottom.

  • Pour the egg-cheese mixture over them.

  • Tap gently to remove air pockets.


4. Bake

  • Bake 35–40 minutes until:

    • Top is deep golden and bubbly

    • Center is set but soft

For extra browning, broil the top for 1–2 minutes.


5. Serve

Let rest 5 minutes, then garnish with:

  • Chopped chives

  • Fresh parsley

  • Drizzle of olive oil

Serve warm with a simple Mediterranean salad.
