🍗 Mediterranean Chicken Feta Bake

Creamy, cheesy, herby, and oven-baked to golden perfection.


🛒 Ingredients (Serves 4–6)

Chicken Layer

  • 3 cups cooked shredded chicken (or 3–4 raw chicken breasts, diced)

  • 1 tbsp olive oil

  • 1 medium onion, finely diced

  • 3–4 garlic cloves, minced

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • 1 tsp dried oregano

Creamy Mediterranean Mixture

  • 1 cup Greek yogurt or ½ cup cream + ½ cup yogurt

  • ½ cup ricotta or cottage cheese (optional but gives amazing texture)

  • 1 cup crumbled feta cheese

  • 1 cup shredded mozzarella

  • 2 eggs

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • ¼ cup chopped fresh parsley

  • ¼ cup chopped sun-dried tomatoes (optional but delicious!)

Topping

  • ½ cup mozzarella

  • ¼ cup feta

  • Fresh thyme or rosemary for garnish


🔪 Instructions

1. Prepare the Chicken Base

  1. Heat 1 tbsp olive oil in a pan.

  2. Sauté onion for 2 minutes.

  3. Add garlic and cook 30 seconds.

  4. Add chicken, paprika, oregano, salt, and pepper.

  5. Stir and cook until fragrant (3–4 minutes).

  6. Transfer to a baking dish.


2. Make the Creamy Mediterranean Layer

In a large bowl, mix together:

  • Greek yogurt

  • ricotta/cottage cheese (if using)

  • feta

  • mozzarella

  • eggs

  • olive oil

  • lemon juice

  • parsley

  • sun-dried tomatoes

Whisk until smooth and creamy.


3. Assemble

  • Pour the creamy mixture over the chicken layer.

  • Spread evenly.

  • Sprinkle the extra mozzarella and feta on top.


4. Bake

  • Preheat oven to 190°C / 375°F.

  • Bake for 30–35 minutes or until golden and bubbly.

  • Garnish with fresh thyme or rosemary.

  • A simple Mediterranean cucumber–tomato salad

  • Garlic roasted potatoes

  • Warm pita or flatbread
