🍗🥒 Mediterranean Chicken Zucchini Bake
Juicy chicken baked with zucchini, tomatoes, olives, garlic, herbs, and a little feta.
🛒 Ingredients (Serves 4)
Chicken

3–4 chicken breasts (or 6 thighs)

2 tbsp extra-virgin olive oil
-
1 tsp paprika
-
1 tsp dried oregano
-
1 tsp garlic powder
-
Salt & pepper
-
Juice of ½ lemon
Vegetables
-
2 medium zucchinis, sliced or halved
-
1 cup cherry tomatoes (or 2 tomatoes, diced)
-
1 small red onion, sliced
-
4–5 garlic cloves, sliced
-
½ cup black or kalamata olives
-
1 tbsp olive oil
-
Salt & pepper
Mediterranean Topping
-
½ cup crumbled feta (optional but recommended)
-
1 tsp dried basil or thyme
-
Fresh parsley or dill for garnish
-
Extra lemon slices for baking
🍳 Instructions
1. Preheat
Heat oven to 200°C (400°F).
2. Season the Chicken
In a bowl, coat chicken with:

olive oil
-
paprika
-
oregano
-
garlic powder
-
salt & pepper
-
lemon juice
Let sit 10–15 minutes (or longer if you have time).
3. Prep the Vegetables
In a baking dish mix:

zucchini
-
tomatoes
-
onion
-
garlic
-
olives
-
olive oil
-
salt & pepper
Spread evenly.
4. Add Chicken
Place the seasoned chicken pieces on top of the vegetables.
Add a few lemon slices around for flavor.
5. Bake
Bake 30–35 minutes, or until chicken is cooked through.
For a golden top, broil the last 3 minutes.
6. Add Feta & Herbs
Remove from oven and sprinkle:

fresh parsley or dill
Let rest 5 minutes before serving.

🌿 Variations
Creamy Greek Version
Add ¼ cup Greek yogurt + ½ tsp oregano over chicken before baking.

Layer zucchini → chicken → tomatoes → feta → repeat.
