✅ Ingredients

1 can (400 g / 15 oz) chickpeas, drained & rinsed

2 ripe avocados, diced

1 cup cherry tomatoes, halved

¼ red onion, finely chopped

2 tablespoons fresh parsley or cilantro, chopped
Dressing

3 tablespoons extra-virgin olive oil

Juice of 1 lemon

1 small garlic clove, minced

½ teaspoon ground cumin (optional)

Salt & black pepper, to taste
👩🍳 Instructions

Prepare Chickpeas
In a bowl, lightly mash half the chickpeas for creaminess.
Leave the rest whole for texture. -
Assemble Salad
Add avocado, tomatoes, onion, and herbs to the bowl. -
Make Dressing
Whisk olive oil, lemon juice, garlic, cumin, salt, and pepper. -
Toss & Serve
Gently toss everything together until coated.
Taste and adjust seasoning.
