🍪 Mediterranean Cranberry Pistachio Shortbread Cookies
🧺 Ingredients
1 cup (225 g) unsalted butter, softened
½ cup powdered sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
¼ teaspoon salt
¾ cup dried cranberries, chopped
½ cup pistachios, shelled & chopped

Zest of ½ orange or lemon
1 tablespoon rose water or orange blossom water (optional)

Cream butter and sugar until smooth and pale.
Mix in vanilla and citrus zest (if using).
Add flour and salt; mix just until combined.
Fold in cranberries and pistachios.
Shape dough into a log, wrap, and chill 30–45 minutes.
Preheat oven to 170°C / 340°F.
Slice into ½-inch rounds and place on parchment-lined baking sheet.
Bake 12–15 minutes, just until edges are lightly golden.
Cool completely before serving.

Dust lightly with powdered sugar
