🥦 Mediterranean Crispy Roasted Cauliflower

🧄 Ingredients

  • 1 large head cauliflower, cut into florets

  • 3 tbsp extra virgin olive oil

  • ½ tsp smoked paprika

  • ½ tsp sweet paprika

  • ½ tsp ground cumin

  • ½ tsp garlic powder

  • ¼ tsp turmeric (optional)

  • Salt & freshly ground black pepper to taste

Optional Crispy Boost

  • ¼ cup grated Parmesan or nutritional yeast (vegan)

  • 1 tbsp cornstarch or chickpea flour (extra crunch)

Mediterranean Finish (Optional but Amazing)

  • Fresh lemon juice

  • Chopped parsley or cilantro

  • Tahini drizzle or Greek yogurt sauce

  • Chili flakes


🔪 Instructions

  1. Preheat oven to 425°F (220°C). Line a baking tray with parchment paper.

  2. Dry the cauliflower
    Wash and pat florets very dry (this is key for crispiness).

  3. Season
    In a large bowl, toss cauliflower with olive oil, paprika, cumin, garlic powder, turmeric, salt, and pepper.
    For extra crispiness, toss with cornstarch/chickpea flour and Parmesan or nutritional yeast.

  4. Roast
    Spread florets in a single layer (don’t crowd).
    Roast 30–35 minutes, flipping halfway, until deeply golden and crispy on edges.

  5. Finish & serve
    Squeeze fresh lemon juice over top.
    Sprinkle with herbs and chili flakes. Add tahini or yogurt sauce if desired.
