🥦 Mediterranean Crispy Roasted Cauliflower

1 large head cauliflower, cut into florets

3 tbsp extra virgin olive oil

½ tsp smoked paprika

½ tsp sweet paprika

½ tsp ground cumin

½ tsp garlic powder
-
¼ tsp turmeric (optional)

Salt & freshly ground black pepper to taste

¼ cup grated Parmesan or nutritional yeast (vegan)

1 tbsp cornstarch or chickpea flour (extra crunch)
Mediterranean Finish (Optional but Amazing)

Fresh lemon juice

Chopped parsley or cilantro

Tahini drizzle or Greek yogurt sauce

🔪 Instructions

Preheat oven to 425°F (220°C). Line a baking tray with parchment paper.

Dry the cauliflower
Wash and pat florets very dry (this is key for crispiness). -
Season
In a large bowl, toss cauliflower with olive oil, paprika, cumin, garlic powder, turmeric, salt, and pepper.
For extra crispiness, toss with cornstarch/chickpea flour and Parmesan or nutritional yeast. -
Roast
Spread florets in a single layer (don’t crowd).
Roast 30–35 minutes, flipping halfway, until deeply golden and crispy on edges. -
Finish & serve
Squeeze fresh lemon juice over top.
Sprinkle with herbs and chili flakes. Add tahini or yogurt sauce if desired.
