🥗 Mediterranean Grilled Chicken Salad – Full Recipe

A fresh, vibrant, protein-packed salad with classic Mediterranean flavors — grilled chicken, crisp veggies, olives, herbs, and a zesty homemade dressing.


Ingredients (Serves 2–3)

For the Grilled Chicken

  • 2 chicken breasts (or 3 thighs, boneless)

  • 2 tbsp olive oil

  • 1 tbsp lemon juice

  • 1 tsp lemon zest

  • 2 cloves garlic, minced

  • 1 tsp oregano

  • ½ tsp paprika

  • ½ tsp black pepper

  • ½ tsp salt


For the Salad

  • 2 cups mixed greens (romaine, arugula, spinach)

  • 1 cup cucumber, sliced

  • 1 cup cherry tomatoes, halved

  • ½ red onion, thinly sliced

  • ½ cup kalamata olives

  • ½ cup feta cheese, crumbled

  • 1 small avocado, sliced (optional)

  • ½ cup chickpeas, drained & rinsed (optional)


Mediterranean Lemon-Herb Dressing

  • 3 tbsp extra-virgin olive oil

  • 2 tbsp lemon juice

  • 1 tsp red wine vinegar

  • 1 tsp Dijon mustard

  • 1 clove garlic, minced

  • ½ tsp oregano

  • 1 tbsp fresh parsley, chopped

  • Salt & pepper to taste


🔥 Instructions

1. Marinate the Chicken

  1. In a bowl, mix olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper.

  2. Coat chicken well and marinate 15 minutes (or up to 4 hours).


2. Grill the Chicken

  • Heat a grill pan or outdoor grill.

  • Cook chicken 5–6 minutes per side (thighs need slightly longer) until golden and cooked through.

  • Let it rest for 5 minutes, then slice.


3. Make the Dressing

Whisk together: olive oil, lemon juice, vinegar, mustard, garlic, oregano, parsley, salt, and pepper.


4. Assemble the Salad

In a large bowl or platter:

  1. Add greens

  2. Top with cucumber, tomatoes, red onion, olives, chickpeas, avocado

  3. Add sliced grilled chicken

  4. Sprinkle feta on top

  5. Drizzle with plenty of dressing
