🌯 Mediterranean Ground Beef Tortilla Wraps

Ingredients (Makes 6–8 wraps)
For the Beef Filling

1 tbsp olive oil
-
1 medium onion, finely chopped
-
3 garlic cloves, minced
-
500g ground beef
-
1 tsp paprika
-
1 tsp cumin
-
1 tsp dried oregano
-
½ tsp coriander powder (optional)
-
½ tsp chili flakes (optional)
-
Salt and black pepper, to taste
-
2 tbsp tomato paste
-
¼ cup water or broth
-
1 tbsp lemon juice
For the Mediterranean Wrap Add-Ins

6–8 tortillas (whole-wheat or regular)
-
1 cup chopped tomatoes (or cherry tomatoes)
-
1 cup cucumber, diced
-
½ cup red onion, thinly sliced
-
½ cup shredded lettuce or baby spinach
-
½ cup feta cheese, crumbled
-
¼ cup olives, sliced (optional)
-
Fresh parsley or mint, chopped
Yogurt Garlic Sauce
-
1 cup Greek yogurt
-
1 tbsp olive oil
-
1 garlic clove, grated
-
1–2 tsp lemon juice
-
Salt and pepper to taste
-
½ tsp dried dill or mint (optional)
Instructions
1. Prepare the Beef
-
Heat olive oil in a pan over medium heat.

Add onions and sauté until soft and golden.

Add garlic and cook for 30 seconds.

Add ground beef and cook until browned, breaking it apart.

Season with paprika, cumin, oregano, coriander, chili flakes, salt & pepper.

Stir in tomato paste and water; simmer 5 minutes.

Add lemon juice and adjust seasoning.
2. Make the Yogurt Garlic Sauce
Whisk all sauce ingredients together until creamy. Taste and adjust lemon/salt.
3. Assemble the Wraps

Warm tortillas in a pan for a few seconds.

Spread 1–2 spoonfuls of yogurt sauce.

Add a layer of lettuce/spinach.
-
Add spoonfuls of the seasoned beef.
-
Top with tomatoes, cucumber, red onion, feta, olives, and herbs.
-
Drizzle a bit more sauce.
-
Roll tightly like a wrap or fold like a burrito.
4. Serve
Eat immediately while warm — or grill the wrap for 2–3 minutes per side to get a crispy outer layer!
