🍠 Mediterranean Honey-Lemon Roasted Sweet Potatoes (or Pumpkin) 

✨ Ingredients

  • 3–4 cups sweet potatoes or pumpkin, peeled & cut into cubes

  • 2–3 tbsp olive oil

  • 1 tbsp honey (optional—use lemon only if avoiding all sweeteners)

  • 1 tbsp lemon juice

  • ½ tsp paprika

  • ½ tsp garlic powder (optional)

  • ¼ tsp turmeric (Mediterranean touch)

  • Salt & black pepper, to taste

  • Optional:

    • A pinch of cinnamon (pairs beautifully with sweet potatoes)

    • Fresh parsley for topping


🔥 Instructions

1️⃣ Prep the Veggies

  • Peel and cube the sweet potatoes or pumpkin into bite-sized chunks.

  • Lay them on a baking tray.

2️⃣ Make the Mediterranean Glaze

In a small bowl, whisk together:

  • Olive oil

  • Honey

  • Lemon juice

  • Paprika

  • Turmeric

  • Garlic powder (optional)

  • Salt & pepper

3️⃣ Coat

  • Pour the glaze over the cubes.

  • Toss well to fully coat every piece.

4️⃣ Roast

  • Preheat oven to 200°C / 400°F.

  • Roast 25–35 minutes, flipping halfway.

  • The edges should caramelize and darken like in your photo.

5️⃣ Finish

  • Taste and adjust salt or lemon.

  • Garnish with parsley if desired.

  • Add a splash of extra lemon before serving for freshness.

  • Sprinkle za’atar for extra Mediterranean flavor.

  • Use pumpkin if you want a lighter, lower-calorie option.
