Mediterranean Oat & Apple Breakfast Bars

🍎 Mediterranean Oat & Apple Breakfast Bars (No Sugar, No Flour)

Soft, fruity, fiber-rich, and naturally sweet from apples + banana + dried fruit.


✨ Ingredients

  • 1 cup (100g) oatmeal

  • 3 medium apples, grated

  • ½ cup (120ml) water

  • 1 ripe banana, mashed

  • 100g (3.5 oz) dried blueberries

  • 100g (3.5 oz) raisins

  • Optional: cinnamon, nutmeg, cardamom, orange zest, vanilla

  • Optional Mediterranean boost: 1–2 tbsp olive oil (for richness) or a handful of chopped walnuts


🍽️ Instructions

1️⃣ Prepare the Apples

  • Wash and grate all 3 apples (leave skins on for fiber).

  • If very juicy, don’t squeeze them—the juice sweetens the bars.

2️⃣ Mix the Wet Base

In a bowl, combine:

  • Grated apples

  • Mashed banana

  • Water

  • (Optional) 1–2 tbsp olive oil

  • Spices of choice (cinnamon is perfect)

Stir until fully combined.

3️⃣ Add Dry Ingredients

Add:

  • Oats

  • Dried blueberries

  • Raisins

Mix well—let it sit 5 minutes so the oats absorb moisture.

4️⃣ Bake

  • Preheat oven to 180°C / 350°F.

  • Line a small pan with parchment paper.

  • Spread the mixture evenly (1–1.5 inches thick).

  • Bake 30–35 minutes, until golden on top and firm.

5️⃣ Cool & Slice

  • Allow to cool fully before cutting into squares or bars.

  • Texture becomes firmer as it cools.


🌿 Mediterranean Tips

  • Add lemon zest for brightness.

  • Swap raisins for chopped dates if you want more natural sweetness.

  • Add a handful of walnuts or almonds for healthy fats.
