🥔🧀 Mediterranean Potato Roll (10-Minute Prep)

✅ Ingredients

  • 3 medium potatoes, peeled

  • 2 eggs

  • Salt & black pepper, to taste

  • ½ teaspoon paprika

  • ½ teaspoon dried oregano or Italian herbs

  • 1 cup shredded mozzarella or cheese blend

  • 1 small onion, finely chopped (optional)

  • 2 tablespoons olive oil

  • Optional filling: cooked mushrooms, spinach, olives, or ham

  • Fresh parsley for topping


👩‍🍳 Instructions

  1. Prep Potatoes
    Grate potatoes and squeeze out excess liquid well.

  2. Mix Base
    In a bowl, combine grated potatoes, eggs, olive oil, salt, pepper, paprika, and oregano. Mix well.

  3. Bake Base Layer
    Line a baking tray with parchment paper.
    Spread potato mixture into a thin rectangle.
    Bake at 200°C (400°F) for 20–25 minutes until golden and set.

  4. Add Filling
    Remove from oven.
    Sprinkle cheese evenly and add optional fillings.

  5. Roll It
    Using the parchment paper, gently roll into a log.

  6. Final Bake
    Return to oven for 8–10 minutes until cheese melts and top is crispy.

  7. Serve
    Sprinkle with parsley. Slice and enjoy!
