Prep Potatoes
Grate potatoes and squeeze out excess liquid well. -
Mix Base
In a bowl, combine grated potatoes, eggs, olive oil, salt, pepper, paprika, and oregano. Mix well. -
Bake Base Layer
Line a baking tray with parchment paper.
Spread potato mixture into a thin rectangle.
Bake at 200°C (400°F) for 20–25 minutes until golden and set. -
Add Filling
Remove from oven.
Sprinkle cheese evenly and add optional fillings. -
Roll It
Using the parchment paper, gently roll into a log. -
Final Bake
Return to oven for 8–10 minutes until cheese melts and top is crispy. -
Serve
