🥦🍄 Mediterranean Sautéed Mushroom & Broccoli Stir-Fry
✅ Ingredients

2 cups broccoli florets

2 cups mushrooms (button or cremini), sliced

2 tablespoons olive oil
-
3 cloves garlic, minced
-
Juice of ½ lemon
-
½ teaspoon dried oregano or thyme
-
Salt & black pepper, to taste

Optional: pinch of chili flakes or paprika

Optional topping: parmesan or feta
👩🍳 Instructions

Prep Broccoli
Lightly steam or blanch broccoli for 2–3 minutes until bright green. Drain well. -
Sauté Mushrooms
Heat olive oil in a large pan over medium-high heat.
Add mushrooms and cook 4–5 minutes until golden and moisture evaporates. -
Add Garlic & Herbs
Stir in garlic, oregano, salt, pepper, and chili flakes. Cook 30 seconds. -
Combine
Add broccoli to the pan. Toss well and sauté 2–3 minutes until coated and tender. -
Finish
Squeeze lemon juice over the top. Taste and adjust seasoning.
