🥦🍄 Mediterranean Sautéed Mushroom & Broccoli Stir-Fry

✅ Ingredients

  • 2 cups broccoli florets

  • 2 cups mushrooms (button or cremini), sliced

  • 2 tablespoons olive oil

  • 3 cloves garlic, minced

  • Juice of ½ lemon

  • ½ teaspoon dried oregano or thyme

  • Salt & black pepper, to taste

  • Optional: pinch of chili flakes or paprika

  • Optional topping: parmesan or feta


👩‍🍳 Instructions

  1. Prep Broccoli
    Lightly steam or blanch broccoli for 2–3 minutes until bright green. Drain well.

  2. Sauté Mushrooms
    Heat olive oil in a large pan over medium-high heat.
    Add mushrooms and cook 4–5 minutes until golden and moisture evaporates.

  3. Add Garlic & Herbs
    Stir in garlic, oregano, salt, pepper, and chili flakes. Cook 30 seconds.

  4. Combine
    Add broccoli to the pan. Toss well and sauté 2–3 minutes until coated and tender.

  5. Finish
    Squeeze lemon juice over the top. Taste and adjust seasoning.


🌿 Mediterranean Variations

  • Add sun-dried tomatoes or olives

  • Toss with chickpeas for protein

  • Finish with toasted pine nuts
