🫒 Mediterranean Savory Chicken & Veggie Loaf

🧺 Ingredients (Serves 6–8)

500 g (1 lb) ground chicken

1 cup finely diced potatoes (parboiled 5 minutes)

½ cup red bell pepper, finely diced

⅓ cup grated carrot

⅓ cup chopped olives or dried cranberries (like in the image)

½ cup Greek yogurt

½ cup breadcrumbs (whole wheat or almond flour)

⅓ cup grated Parmesan

3 tbsp extra-virgin olive oil
Seasoning

1 tsp dried oregano

1 tsp Italian seasoning

½ tsp smoked paprika

½ tsp black pepper

1 tsp sea salt

2 tbsp fresh parsley, chopped
Topping (Optional but Recommended)

👩🍳 Instructions

Preheat Oven
Set to 180°C / 350°F. Grease a round or loaf pan and line with parchment. -
Mix the Loaf
In a large bowl, combine chicken, potatoes, onion, bell pepper, carrot, olives/cranberries, and garlic.
Add eggs, yogurt, breadcrumbs, Parmesan, olive oil, herbs, spices, salt, pepper, and parsley. -
Combine Gently
Mix just until combined — don’t overmix to keep it tender. -
Shape & Top
Press mixture into the pan. Brush top lightly with olive oil and sprinkle Parmesan + breadcrumbs. -
Bake
Bake uncovered for 45–55 minutes, until deeply golden and internal temp reaches 74°C / 165°F. -
Rest & Slice
Rest 10 minutes before slicing (this keeps it juicy).
