Mediterranean Stuffed Mashed Potato Nests
📝 Ingredients
For the Potato Nests:

3 large potatoes (peeled & boiled)

2 tbsp butter (melted)

¼ cup milk (warm)

½ cup grated mozzarella or parmesan cheese

1 egg yolk
-
Salt & black pepper to taste

½ tsp garlic powder (optional)
For the Mediterranean Filling:

½ cup cherry tomatoes (diced)
-
½ cup cucumber (diced)
-
¼ cup red onion (finely chopped)
-
¼ cup Kalamata olives (sliced)
-
2 tbsp roasted red peppers (chopped)

¼ cup crumbled feta cheese
-
2 tbsp fresh parsley (chopped)
-
2 tbsp extra virgin olive oil
-
1 tbsp lemon juice
-
Salt & pepper to taste

Prepare the Mashed Potato Base

Mash the boiled potatoes until smooth.

Mix in melted butter, warm milk, cheese, egg yolk, garlic powder, salt, and pepper.

Shape the Nests

Preheat oven to 200°C (400°F).

Line a baking tray with parchment paper.

Transfer mashed potatoes into a piping bag with a star nozzle (or spoon them) and pipe into nest shapes with a hollow center.

Bake the Nests

Bake for 18–20 minutes until golden and slightly crisp on the edges.

Let them cool slightly so they hold their shape.

Prepare the Filling

In a bowl, combine tomatoes, cucumber, onion, olives, roasted peppers, parsley, olive oil, lemon juice, salt, and pepper. Mix well.
