Mediterranean Stuffed Mashed Potato Nests

📝 Ingredients

For the Potato Nests:

  • 3 large potatoes (peeled & boiled)

  • 2 tbsp butter (melted)

  • ¼ cup milk (warm)

  • ½ cup grated mozzarella or parmesan cheese

  • 1 egg yolk

  • Salt & black pepper to taste

  • ½ tsp garlic powder (optional)

For the Mediterranean Filling:

  • ½ cup cherry tomatoes (diced)

  • ½ cup cucumber (diced)

  • ¼ cup red onion (finely chopped)

  • ¼ cup Kalamata olives (sliced)

  • 2 tbsp roasted red peppers (chopped)

  • ¼ cup crumbled feta cheese

  • 2 tbsp fresh parsley (chopped)

  • 2 tbsp extra virgin olive oil

  • 1 tbsp lemon juice

  • Salt & pepper to taste


👩‍🍳 Instructions

  1. Prepare the Mashed Potato Base

    • Mash the boiled potatoes until smooth.

    • Mix in melted butter, warm milk, cheese, egg yolk, garlic powder, salt, and pepper.

  2. Shape the Nests

    • Preheat oven to 200°C (400°F).

    • Line a baking tray with parchment paper.

    • Transfer mashed potatoes into a piping bag with a star nozzle (or spoon them) and pipe into nest shapes with a hollow center.

  3. Bake the Nests

    • Bake for 18–20 minutes until golden and slightly crisp on the edges.

    • Let them cool slightly so they hold their shape.

  4. Prepare the Filling

    • In a bowl, combine tomatoes, cucumber, onion, olives, roasted peppers, parsley, olive oil, lemon juice, salt, and pepper. Mix well.

  5. Assemble

    • Spoon the Mediterranean filling into each potato nest.

    • Sprinkle crumbled feta on top.

  6. Serve

    • Serve warm as an appetizer, side dish, or party snack.

  • Add grilled chicken or shrimp for a protein boost.

  • For a creamier filling, mix some Greek yogurt or tzatziki with the veggies.

  • Use sweet potatoes instead of white potatoes for extra flavor.
