Salt & black pepper, to taste

Roast the sweet potatoes
Preheat oven to 400°F (200°C).
Pierce sweet potatoes with a fork, rub lightly with olive oil, and bake for 40–45 minutes until tender. -
Prepare the filling
In a skillet, heat a little olive oil.
Add onion and bell pepper; sauté 2–3 minutes.
Stir in black beans, paprika, cumin, salt, and pepper. Warm through. -
Stuff & bake again
Slice sweet potatoes open lengthwise and fluff the inside with a fork.
Fill with black bean mixture and sprinkle cheese on top.
Return to oven for 5–8 minutes, until cheese melts. -
