20-Minute Mediterranean Sugar-Free Soft Rolls

🛒 Ingredients (7 total)

  1. 2 cups (240 g) plain Greek yogurt (low-fat or nonfat)

  2. 1 large egg

  3. 2 cups (200 g) oat flour or blended oats (gluten-free if needed)

  4. 2 tsp baking powder

  5. 1 tbsp extra-virgin olive oil

  6. 1 tsp salt

  7. Sesame seeds (optional topping but counts as the 7th ingredient)

Note: No yeast — quick rise, 20-minute prep, 10–12 minute baking.


🍞 Instructions

1. Prepare the dough

  1. In a bowl, whisk the Greek yogurt, egg, olive oil, and salt.

  2. Add the oat flour + baking powder.

  3. Mix until a soft dough forms.

  4. Knead gently for 30–45 seconds (oat dough is softer than wheat dough).

If sticky → add 1–2 tbsp more oat flour.
If dry → add 1–2 tbsp yogurt.


2. Shape

  1. Divide into 8 small balls (like in the photo).

  2. Place in a round baking dish close together to get the “pull-apart” effect.


3. Top

  • Lightly brush the tops with milk or olive oil.

  • Sprinkle sesame seeds (Mediterranean touch!).


4. Bake

  • Bake at 400°F (200°C) for 10–12 minutes
    until golden on top and soft inside.


Texture

  • Naturally lightly sweet from oats + yogurt
