🥣 Mediterranean Vegetable Soup — Full Recipe
✨ Ingredients
(4–5 servings)

3 carrots, sliced

2 potatoes, diced

2 celery stalks, sliced

1 onion, chopped

2–3 cloves garlic, minced

1–2 tbsp olive oil

1 tsp turmeric (optional but adds beautiful color)

1 tsp paprika
-
½ tsp dried oregano
-
½ tsp dried thyme
-
6 cups vegetable or chicken broth

Handful fresh parsley, chopped

Salt & black pepper, to taste

Juice of ½ lemon (Mediterranean finishing touch)
🫕 Instructions
1. Sauté the aromatics

Heat olive oil in a pot.

Add onion and garlic, sauté 2–3 minutes until fragrant.
2. Add the vegetables

Add carrots, celery, and potatoes.

Stir for 3–4 minutes.
3. Add spices

Add turmeric, paprika, oregano, thyme, salt, and pepper.

Stir well so the veggies are coated in the spices.
4. Add broth

Pour in the broth.

Bring to a boil, then reduce heat to simmer.
5. Simmer

Cook for 20–25 minutes until potatoes and carrots are tender.
6. Finish with herbs & lemon

Stir in fresh parsley.

Add lemon juice for brightness.
