🥣 Mediterranean Vegetable Soup — Full Recipe

✨ Ingredients

(4–5 servings)

  • 3 carrots, sliced

  • 2 potatoes, diced

  • 2 celery stalks, sliced

  • 1 onion, chopped

  • 2–3 cloves garlic, minced

  • 1–2 tbsp olive oil

  • 1 tsp turmeric (optional but adds beautiful color)

  • 1 tsp paprika

  • ½ tsp dried oregano

  • ½ tsp dried thyme

  • 6 cups vegetable or chicken broth

  • Handful fresh parsley, chopped

  • Salt & black pepper, to taste

  • Juice of ½ lemon (Mediterranean finishing touch)


🫕 Instructions

1. Sauté the aromatics

  • Heat olive oil in a pot.

  • Add onion and garlic, sauté 2–3 minutes until fragrant.

2. Add the vegetables

  • Add carrots, celery, and potatoes.

  • Stir for 3–4 minutes.

3. Add spices

  • Add turmeric, paprika, oregano, thyme, salt, and pepper.

  • Stir well so the veggies are coated in the spices.

4. Add broth

  • Pour in the broth.

  • Bring to a boil, then reduce heat to simmer.

5. Simmer

  • Cook for 20–25 minutes until potatoes and carrots are tender.

6. Finish with herbs & lemon

  • Stir in fresh parsley.

  • Add lemon juice for brightness.


🍽️ Serving Suggestions

  • Drizzle a little extra-virgin olive oil on top.

  • Serve with whole grain bread (optional).

  • Add cooked chickpeas or shredded chicken for extra protein.
