4 medium potatoes, peeled & diced

1 medium zucchini, chopped

1–1.5 liters water or vegetable broth

1️⃣ Prepare the Vegetables
Wash, peel, and cut all vegetables into bite-sized pieces for even cooking.
2️⃣ Sauté the Flavor Base
Heat olive oil in a large pot over medium heat.
Add onion and sauté for 2–3 minutes until soft and translucent.
Add garlic and cook 30 seconds until fragrant.
3️⃣ Add the Vegetables
Stir in carrots, potatoes, and zucchini. Cook for 2–3 minutes to lightly coat them with oil and aromatics.
4️⃣ Add Liquid & Seasoning
Pour in water or vegetable broth until vegetables are just covered.
Add salt, black pepper, turmeric, paprika, and bay leaf.
5️⃣ Simmer
Bring to a gentle boil, then reduce heat and simmer uncovered for 20–25 minutes, until vegetables are tender.
6️⃣ Finish & Serve
Remove bay leaf.
Stir in chopped parsley or cilantro and simmer 2 more minutes.
Taste and adjust seasoning. Serve hot.
