Mediterranean Veggie & Cheese Fritters (Golden Pan-Fried Bites) 🌿🧀
Crispy outside, tender inside – perfect as a light meal or mezze.

Ingredients

  • 1 medium zucchini, grated (squeeze out excess moisture)

  • 1 medium carrot, grated

  • ½ cup yellow cheese, grated (kashkaval, mozzarella, or mild cheddar)

  • 2 eggs

  • 2–3 green onions, finely chopped

  • 2 tbsp fresh parsley or dill, chopped

  • 3–4 tbsp oat flour or chickpea flour (or regular flour)

  • ½ tsp salt

  • ½ tsp black pepper

  • ½ tsp paprika

  • Optional: ¼ tsp garlic powder or oregano

  • Olive oil for frying

Instructions

  1. Prep the veg: Grate the zucchini and squeeze very well to remove moisture. Place in a bowl with carrot, green onions, herbs, and cheese.

  2. Mix: Add eggs, salt, pepper, paprika, and optional seasonings. Stir well.

  3. Bind: Mix in flour until you get a thick, scoopable batter (not runny).

  4. Shape: Form small logs or patties with your hands.

  5. Cook: Heat a thin layer of olive oil in a pan over medium heat. Fry 3–4 minutes per side until golden and cooked through.

  6. Drain: Transfer to paper towels. Serve warm.

Serving Ideas

  • With tzatziki, garlic yogurt, or lemony tahini

  • Alongside a Mediterranean salad

  • Stuff into pita with tomatoes & cucumbers

Tips & Variations

  • Gluten-free: Use chickpea or oat flour.

  • Baked version: Brush with olive oil and bake at 200°C (400°F) for 20–25 minutes, flipping once.

  • Extra protein: Add ¼ cup crumbled feta or ricotta.

  • Low-carb: Replace flour with almond flour (2–3 tbsp).
