Ingredients:

  • 2 medium zucchinis (grated)

  • 2 eggs

  • 2–3 green onions (chopped)

  • 2 cloves garlic (minced)

  • 2 tbsp fresh herbs (dill, parsley, or cilantro – optional)

  • Salt & black pepper to taste

  • Olive oil (or vegetable oil) for frying


Instructions:

  1. Prepare zucchini: Grate the zucchini and squeeze out excess water using a clean towel or paper towel. (This step helps keep fritters crispy instead of soggy.)

  2. Mix batter: In a large bowl, combine zucchini, eggs, flour (or breadcrumbs), Parmesan, garlic, green onions, herbs, salt, and pepper. Mix until well combined.

  3. Heat oil: Place a non-stick pan on medium heat and add a little oil.

  4. Form fritters: Scoop about 2 tablespoons of the mixture and flatten slightly into a patty shape.

  5. Cook: Fry fritters for 3–4 minutes on each side until golden brown and crispy.
