🧄 Melt-In-Your-Mouth Garlic Parmesan Chicken Meatloaf

🧺 Ingredients (Serves 4–6)
Meatloaf

500 g (1 lb) ground chicken

½ cup whole-wheat breadcrumbs or almond flour

⅓ cup freshly grated Parmesan cheese

¼ cup Greek yogurt (keeps it ultra-moist)

1 large egg
-
1 small onion, finely grated
-
4 cloves garlic, minced
-
2 tbsp extra-virgin olive oil
-
1 tsp dried oregano
-
1 tsp Italian seasoning
-
½ tsp smoked paprika
-
½ tsp black pepper
-
¾ tsp sea salt
-
2 tbsp fresh parsley, finely chopped
Garlic Parmesan Glaze

2 tbsp Greek yogurt
-
2 tbsp grated Parmesan
-
1 tbsp olive oil
-
1 clove garlic, finely grated
-
1 tbsp lemon juice
Optional Topping

Extra Parmesan

Fresh parsley or basil
👩🍳 Instructions

Preheat Oven:
Set oven to 180°C / 350°F. Lightly grease a loaf pan or line a baking tray with parchment. -
Mix the Meatloaf:
In a large bowl, combine ground chicken, breadcrumbs, Parmesan, Greek yogurt, egg, onion, garlic, olive oil, herbs, paprika, salt, pepper, and parsley.
Mix gently just until combined (don’t overmix). -
Shape & Bake:
Transfer mixture into the loaf pan or shape into a loaf on the baking tray.
Bake uncovered for 35 minutes. -
Make the Glaze:
Stir together Greek yogurt, Parmesan, olive oil, garlic, and lemon juice. -
Glaze & Finish Baking:
Remove meatloaf, spread glaze evenly over the top, sprinkle with extra Parmesan.
Return to oven and bake 10–15 minutes more until golden and internal temp reaches 74°C / 165°F. -
Rest & Serve:
Let rest 5–10 minutes, then slice and serve.
