🧄 Melt-In-Your-Mouth Garlic Parmesan Chicken Meatloaf

Mediterranean Twist

🧺 Ingredients (Serves 4–6)

Meatloaf

  • 500 g (1 lb) ground chicken

  • ½ cup whole-wheat breadcrumbs or almond flour

  • ⅓ cup freshly grated Parmesan cheese

  • ¼ cup Greek yogurt (keeps it ultra-moist)

  • 1 large egg

  • 1 small onion, finely grated

  • 4 cloves garlic, minced

  • 2 tbsp extra-virgin olive oil

  • 1 tsp dried oregano

  • 1 tsp Italian seasoning

  • ½ tsp smoked paprika

  • ½ tsp black pepper

  • ¾ tsp sea salt

  • 2 tbsp fresh parsley, finely chopped

Garlic Parmesan Glaze

  • 2 tbsp Greek yogurt

  • 2 tbsp grated Parmesan

  • 1 tbsp olive oil

  • 1 clove garlic, finely grated

  • 1 tbsp lemon juice

Optional Topping

  • Extra Parmesan

  • Fresh parsley or basil


👩‍🍳 Instructions

  1. Preheat Oven:
    Set oven to 180°C / 350°F. Lightly grease a loaf pan or line a baking tray with parchment.

  2. Mix the Meatloaf:
    In a large bowl, combine ground chicken, breadcrumbs, Parmesan, Greek yogurt, egg, onion, garlic, olive oil, herbs, paprika, salt, pepper, and parsley.
    Mix gently just until combined (don’t overmix).

  3. Shape & Bake:
    Transfer mixture into the loaf pan or shape into a loaf on the baking tray.
    Bake uncovered for 35 minutes.

  4. Make the Glaze:
    Stir together Greek yogurt, Parmesan, olive oil, garlic, and lemon juice.

  5. Glaze & Finish Baking:
    Remove meatloaf, spread glaze evenly over the top, sprinkle with extra Parmesan.
    Return to oven and bake 10–15 minutes more until golden and internal temp reaches 74°C / 165°F.

  6. Rest & Serve:
    Let rest 5–10 minutes, then slice and serve.

  • With roasted vegetables (zucchini, tomatoes, peppers)

  • Over lemon-garlic mashed potatoes or herbed couscous

  • Alongside a Greek salad or sautéed spinach


💡 Tips for Extra Tenderness

  • Use dark-meat ground chicken if available

  • Finely grate onion for moisture

  • Greek yogurt replaces heavy cream or butter beautifully
