No-Bake Coconut Cream Balls (Mediterranean Style)

🧾 Ingredients

  • 2 cups unsweetened shredded coconut

  • ½ cup coconut cream (thick part from canned coconut milk)

  • 3 tbsp raw honey (or maple syrup)

  • 1 tsp pure vanilla extract

  • ¼ tsp sea salt

Optional Mediterranean Add-Ins

  • Zest of ½ lemon or orange

  • 2 tbsp finely chopped pistachios or almonds

Coating Options

  • Extra shredded coconut

  • Finely chopped pistachios

  • Cocoa powder or dark chocolate drizzle


🥥 Instructions

  1. In a mixing bowl, combine shredded coconut, coconut cream, honey, vanilla, and salt. Mix until thick and sticky.

  2. Stir in citrus zest or nuts if using.

  3. Scoop about 1 tablespoon of mixture and roll into smooth balls.

  4. Roll each ball in coconut, pistachios, or cocoa powder.

  5. Place on a lined tray and refrigerate for 30–45 minutes until firm.
